Last week my sister and I found ourselves without powdered sugar, icing to make, and naked birthday cupcakes. So we made our own. To make, combine 1 cup granulated sugar and 1 tablespoon cornstarch in a food processor and process until completely smooth, about 1 minute or more. The longer you process, the finer the sugar. The shorter you process, the coarser the sugar.

Oh my goodness, I needed this tip tonight when making these http://cookiesandcups.com/double-glazed-funfetti-donuts/ for my Moms group, which I happen to be hosting on my own birthday! I ran out of powdered sugar, a giant 25 lb bag right in the process of icing half of the donuts.
I put reg. sugar in my blender one time ’cause I was out of conf. sugar BUT I didn’t know I should’ve also put in some cornstarch as well – thanks so much for the tip !

Good tip! I’ve found that if I just need a little confectioner’s sugar (not enough for frosting), a quick whirl in the coffee grinder works great too!
