More often than not, my limes are hard as a rock and yield little juice and a very sore hand. Maybe I should start picking out my own rather than buying the bag? Making dinner the other night, trying to come up with a solution, I remembered a tip my friend Meghan taught me a couple years ago. And it worked like magic. Using the tip of a sharp knife, poke a small slit in the lime and microwave for about 30 seconds. The lime will come out juicy and maleable. Same rule also applies to lemons.

Worked like a charm!! had to decrease the time to 23 seconds before the lemons “blew”. Squeezed them all and put them in ice cube trays (1 TBLS each section) and froze them.
since i have a no microwave kitchen (not based in any science I have read- it’s just a thing i do…), i set them on counter, apply pressure with my hand, and roll them before cutting… it’s what the bartender’s did during my years of waiting tables…and it works well! i think it might break down some of the fibers inside that would otherwise hold in the juice, leaving it soft and ready to go. ps thomas and I were totally discussing this topic just this wednesday night- he had a slice of hard lime and an open corona. no bueno. love to you, Kev, and your wee one!
