Whenever a recipe calls for ‘room temperature’ eggs, you don’t have to plan hours in advance. You can place your eggs in a bowl of lukewarm water for about five minutes to do the trick. It’s especially helpful for whipping eggs for desserts.

I have also heard that if you buy organic eggs (which I do) they can sit out on the counter and do not need to be refrigerated. I haven’t been brave enough to try that, although, if I know I’m baking the next day, I will leave them out over night. 🙂
