Need ripe bananas in a pinch? Roast them. Preheat oven to 325°. Place unpeeled, bright yellow bananas on a lined baking sheet (bananas may ooze). Bake until skins are completely black, about 20 minutes. Flip bananas halfway through. Allow to cool for at least 5 minutes before handling.

this is my favorite flavor-booster step whenever I make banana bread or my bananas foster whoopie pies. even if my bananas are ripe, I still like to toss them in the oven – and I use the caramelized sugary liquid that usually drips out when peeling the bananas in my banana mash, too. can’t hurt w/the extra banana flavor, right? great share!
