Don’t mind the boxes, packing tape, unkempt hair, and complete mess that sits behind this computer screen. By the end of the week, we will be moved into the new place. At least that’s the plan. But since nothing has gone quite as planned, I may still be sitting at this here desk come next week. Let’s pray that’s not the case. My sanity is about to walk out the door on me.

Thank you for replying so quickly! I am excited about the healthy recipes on your blog which I read for the first time yesterday. I like that you specified whole wheat noodles and whole wheat bread for the topping :).
I’m currently making whole wheat chocolate chip cookie dough to store in the freezer. In reality I should be making satisfying and filling meals like this one. I have a list a mile long of meals I can make ahead and freeze (meatballs, turkey tetrazzini, lasagna, etc), but as of right now there are 3 pound cakes in the freezer and a bag of frozen peas. With 2 weeks left I think it’s time to start baking some savory meals, and I think I’ll start with this one. Thanks for the inspiration. Hope the move goes well and that you’re feeling okay – I hear it’s hot in New Haven.
