For years, I’ve walked around with soggy french toast syndrome (SFTS). I thought it was me. I’m sure a good part of it was. But after I had my mother-in-law’s challah french toast and that italian style french toast from the cafe down the street, the light bulb went off.
It’s all in the bread. And my sandwich loaf just wasn’t cutting it. Soaking up the egg mixture like a sponge. And ending up on the breakfast plate still a sponge. Eww. If you also suffer from SFTS, join with me in trying a crusty loaf of bread next time you make french toast. It’s the only cure out there.
6 1?-slices of crusty bread (italian, french, challah…)
2 eggs
1/4 c. milk
1/2 tsp. pure vanilla extract
1/4 tsp. cinnamon
dash of sea salt
Instructions
Heat cast iron griddle or pan to medium-high heat.
In a shallow pyrex dish, whisk together eggs, milk, vanilla, cinnamon, and sea salt until evenly combined.
Add a tiny pat of butter to the cooking surface, more if not using a non stick or treated surface.
Dip each slice, coating both sides, and place on cooking surface, about 2-3 minutes per side. (For extra stale or hard bread, allow slice to soak for 1 minute on each side.)
Top with maple syrup, fruit, powdered sugar, nuts, etc. of your choice. Looking for other topping ideas? Try caramelizing bananas or shmearing orange honey mascarpone in between slices.

My mom “insists” on making her bread pudding with challah bread, or, if she’s in a pinch, a stale baguette (very rare… baguettes are inhaled with reckless abandon!). I never thought that the same rule of thumb could be applied to French toast! Thank you for curing my chronic case of SFTS. (:
I like the way your mom thinks! I almost walked out of the store with a loaf of challah (my fave) until I saw the wheat baguette. My hips told me to go wheat, although I’m sure it makes zero difference. Next time challah wins 🙂
I honestly haven’t gotten out much since we moved here to discover the good places. I picked up this bread at Elm City Co-op. They had a pretty good selection. I’ve heard there’s some really good (bread) bakeries around. I guess it’s time I get out of my hole and do some discovering. I saw lots of beautiful bread at the New Haven farmer’s market last summer. Are you from the area? Have any good recommendations?
I’ve never had much success with french toast. But then again I’ve always just used plan ol’ sandwich bread. I’m going to try this!
Also I just wanted to stop bye and say I pinned a pizza recipe on pinterest a few days ago and I went to find the recipe over at Rue Mag and I was pleasantly surprised to find it was yours! I am making it this week. It looks so good!

French Toast is one of my very very favorite breakfasts!! It’s my splurge of choice!! My mom used to make it for me growing up so it’s nostalgic now. She used whatever bread she had around but I agree, it’s best on thick crusty bread!
I don’t think my mom ever made us french toast growing up, now that I think about it. I started to try in high school after having it at friends’ houses and mine always turned out nasty. My mom was more of a lemon or almond poppyseed muffin maker (from the Krusteaz box). Hope you and that babe are doing well!
yes, it’s all about the bread. I usually use stale baguette or zopf (Swiss version of challah) for my French toast. And because my kids are messy eaters, I add the maple sirup to the batter so we don’t have sticky drips all over.
Maple syrup to the batter is genius! Love that idea. And there is absolutely nothing better than challah french toast. It beats the crusty wheat bread I usually use.

i miss french toast! i gave up gluten a while back, and i have yet to find a gluten free bread that yields the same results. looks delish.
