Roasted Veggie Wrap | The Fauxmartha

It’s been one of those weeks where I’ve had more of these than the things that grow out of the ground. My poor body. To combat “those weeks”, which are becoming my new norm, I’ve started roasting a sheet of veggies in a balsamic vinaigrette at the start of the week. Roasting vegetables is a magical thing. They caramelize and turn to candy in the oven. I could eat the whole sheet in one sitting. But instead, I ration them out throughout the week, stuff them in a wrap, and call it lunch. Did you watch the show Dinosaurs back in the day? We did. Every last episode. I watched it again on Netflix just before having Hal. It kept me occupied during my many craft projects for her room. I’m pretty sure she’d recognize the theme song if I played it for her now. In one episode Robbie looks at his dad, Earl Sinclair, and explains he’s a herbivore. Earl was a carnivore. You can imagine how that went over. Earl took Robbie out back to catch dinner. Robbie befriended his “dinner” and made a salad.  Read more

The very, very best oatmeal | The Fauxmartha

At best, I tolerate warm oatmeal in the winter (although baked oatmeal is a different story). No matter how I make it, it turns into a thick gummy paste better suited as an adhesive agent than an edible meal. It absorbs brown sugar faster than the leading paper towel. And its curb appeal is far from slam-on-your-breaks. I hate the last bite or every bite for that matter. Last week I was honored to share my Quick Pasta + Roasted Veggie recipe over at A Cup of Joe for her Quick Fall Pasta series. This was the first post I made and shot post-babe. It was also our first day alone. Just me and Hal. Kev was back at work for the first time in three weeks. I was nervous. Extremely nervous. We didn’t understand each other quite yet. Somehow I was able to make and shoot this before the screaming sirens went off. I’m not sure I could reproduce the same results again with her. I think she knew I needed a little boost of confidence that day. I still haven’t quite figured out the work from home and take care of the babe yet. Hallie usually wins. I sat down to write this post last night. I wanted it to exude thankfulness in light of the upcoming holiday and this here Maple Pumpkin Pie. But I was far from feeling thankful last night. After a long day of 20-minute catnaps with a cranky babe, I thought I’d hand her over to Kev as soon as he walked in the door. After 5 minutes at home, he was called in. Dang. I forgot he was on call.
