We are settled! In a house that I plan to breathe my last breath in. Just like the last day of high school, college, etc, I thought this day would never come. In the summer of 2008, Kev started graduate school. I started this blog soon thereafter. We lived 4 semi-settled years in Chicago, knowing we’d most likely move come internship time. And that we did. In 2012, we hauled our belongings to the east coast where we spent two years completing his internship and post-doctoral work. We loved our time in Connecticut, but it didn’t quite feel like home. In 2014, we trekked back to the midwest with a cute 9-month in tow and plans to build a house in Minneapolis. We parked ourselves in a tiny apartment just outside the Twin Cities and began the never-ending process of building a house. Like all things, it came to an end. And here we are! Settled, minus all the boxes in the basement and frames lining the walls, with a margarita in hand. Well, one of us is.
Seven years of marriage, and I’ve never been able to persuade Kev to partake in my morning coffee and evening cocktail. What’s the advice they give to newlyweds? Don’t try to change the other person. I gave up but tried hard. And instead came up with a single serving margarita. I think they also say marriage is about compromise. And wouldn’t you know, just when I gave up the fight, I’ve caught him taking sips of my marg. I’ll gladly pour him one while we sit on the couch and talk about anything but which door knobs to go with. Because it’s been done. We’re settled!
This margarita comes together in under a minute. It’s fit for a weeknight single serving. Come the weekend, I double this recipe and still call it a single serving. It’s smooth and wont make your lips pucker and your eyes wince. Line the rim of the glass with salt, if that’s your thing. Serve with your favorite Mexican dish.
Ingredients
Scale
1 oz. fresh-squeezed lime juice
1 oz. filtered water
1 tsp. agave nectar
2 oz. tequila (100% pure agave)
1 oz. triple sec (on Cointreau)
tiny pinch of salt (optional)
generous scoop of ice
Instructions
Into a glass, add lime juice, water, and agave nectar. Stir to combine.
Add tequila, triple sec, and salt. Stir again. Top with a generous scoop of ice.

Melissa, I loved this story. Danny and I will have cocktails. The one thing I can’t get him to do AFTER 9 years of marriage is to eat supper at a NORMAL time. Normal being anywhere before 10PM. I gave him a huge range of times. No Danny eats his supper right before he goes to bed. No matter if he is up till 3AM. He will eat and got right to bed and RIGHT to sleep. I grew up with family dinners and we ATE together. I raised my son to do the same. Thanks for the update on your house. Now I want to see a tour, Have a good night, Sarah

Congrats on the move! It sounds exciting. This margarita is such a great idea for a small party, too if someone is hankering for something other than beer. It’s always nice to know what goes into a single glass so you can easily customize it to the number of guests. Thanks for sharing!

I usually buy Tequila from Costco. They sell a Silver 100% agave. I should probably do a taste test. I’ll report back when that happens!
