I could write the story of our life based on google searches. Is it normal to change a newborn’s diaper 15 times a day?Why do newborns cry all the time? What is the climate like in Minneapolis? How long does it take to build a home? How long does it take a moving company to deliver your stuff? Where is the best biscuit in the Twin Cities? We landed at Sun Street Breads based on the aforementioned search a couple weekends after moving here. My biscuit, which was mighty good, came with a side of raspberry quick jam. A couple weeks later, I met Stephanie for lunch at The Buttered Tin. I can’t pass up a good biscuit, and they had a good biscuit on the menu. Once again, it came with a side of raspberry quick jam. Whatever this phenomenon was, I needed it for my weekend biscuits.
Last week, Erin visited for business. In the five days she was here, I made biscuits twice (one of those times for breakfast with Sonja and Alex). We used the tail-end-of-summer-raspberries to make that loose jam like all the cool biscuit joints in town do. It was just as quick as I imagined. Minus a brief macerating time, it came together in 15 minutes. And I didn’t have to know a thing about canning, which is good because I don’t know a thing about canning. So friends, put down that can of pumpkin and bid summer farewell with this raspberry quick jam and these weekend biscuits. Can you hear the authority? That’s my mom voice.
This quick jam comes together in about 15 minutes. It’s a loose jam compared to what you’re probably used to. The raspberry shines without making your lips pucker. Make it the night before, serve the next morning, or store for up to 3 weeks in the fridge. Just do it. (No jam making, canning experience required.)
Ingredients
Scale
1 1/2 c. raspberries, heaping
1/4 c. pure cane sugar, scant
1/4 tsp. lemon zest
1/4 tsp. lemon juice

I am all sorts of petrified of canning, so yes to all things small batch and QUICK. Raspberry is my favorite jam, especially for PB+Js so I see myself making many batches of this.
if the raspberries are sweet enough, skip the sugar! …or a touch of honey will do. i always add white chia seeds for a bit more jammy texture, love small batch jams. thanks for sharing! 🙂
As soon as I realized that you could just make a SMALL batch of jam, it was like my world opened up. Especially since 12 jars of homemade canned jam in my pantry would probably last me about 6 years. Yep, this is better for me.
The onslaught of pumpkin things is too soon! Pinterest, instagram, blogs – everything is slowly morphing into pumpkin soup and pumpkin pie and pumpkin soap and pumpkin I-don’t-even-know.
I’m still wearing flip flops here so I’m all about this raspberry jam. Don’t get me wrong, I absolute love cold weather and the coziness it brings. Hell, I’m already getting stoked on Christmas. But the pumpkin is too much, too soon. We have to say goodbye to summer before we shove pumpkin things down everyones throats (literally and figuratively). I feel like this raspberry jam is the perfect way to say a nice, slow farewell to summer in the best way possible. And maybe some heirloom tomatoes on toast.
Quick jams are my favorite kind of jams and although raspberry is my favorite, I’ve never made it! Bookmarking! P.S. sometimes I look at my Google searches and laugh 🙂

Oh this looks perfect! Canning is great, but sometimes you just don’t have to time or energy for all that. So I’m down for a 15 minute jam!
