I’m back in the saddle, the quick and ready-in-under-30-minute, pantry-friendly, dinner-making saddle. You know, the as-few-pots-and-pans and as-much-flavor-as-possible saddle. The use-up-every-ingredient-in-the-fridge saddle. Which is how I landed on this recipe for Pantry-Friendly Thai Red Curry, to use up the little bottle of Thai Red Curry paste that often sits idle yet lasts forever on the condiment shelf of the fridge. The Minimalist Kitchen has been out for 12 days! Seeing it out in the wild has calmed so many of my anxieties. It’s been incredible to see you making over your pantries to feel more organized and less frustrating. It’s been incredible to see you making recipes from the book. Not only making the recipes, but making them yours, with the things you have on hand. That’s the same way I find myself cooking, too. I say this throughout the book—please don’t consume my words like a prescription. But rather, use them as a framework. And you’re doing it. In April, I tackled the topic of How to Shop for Good Produce. It’s something we all do everyday, and yet, there’s a bit of an art to buying and storing great produce. This week we’re tackling the large topic of How to Shop the Farmers Market. This is a daunting post for me to write. I’ve been shopping the farmers market since I moved away from home, 9 years ago, and it still makes me nervous. The market is full of the unfamiliar.
