With all this talk of pumpkin lattes and apple crisps, I’m hanging on to summer for dear life. Not ready to let it go. Not one bit. So we’re making summery desserts nearly every night. This week it’s been peach cobbler and these dairy-free creamsicles.

I bought this little Zoku popsicle maker from a William Sonoma outlet nearby, and waited till the end of summer to finally remove it from it’s packaging. Oy. Being timely is not my cup of tea. First up— yogurt pops. They tasted like yogurt frozen, not to be confused with frozen yogurt. We ate them because they “qualified” as dessert, and we throw nothing away. But they’ll never grace the popsicle mold again. Bleh.

But these little gems? They’ll rock your end-of-summer, it-can’t-really-be-over-yet, no-I’m-not-wearing-a-sweatshirt-right-now, world.

They are oh so creamy thanks to the coconut milk. Perfect for that nearly over ripe banana sitting on your kitchen counter, and those leftover oranges you’d rather not get stuck in your teeth. Slightly sweetened with a little agave nectar, they are totally swimsuit season sweatshirt season worthy.

Let’s not say good-bye to summer quite yet. I’m not ready to let go of the warmer weather and dinners on the patio. Honestly though, I think I may be a little scared of the unknown that is raising a newborn. We’ll deal with that when it comes. In the meantime, creamsicles for everyone!

Dairy-free Creamsicles

  • Yield: about 7 2-oz popsicles or 2 cups of popsicle liquid 1x

Ingredients

Scale
  • 1/2 c. coconut cream, full fat
  • 1/2 c. orange juice, 2-3 oranges
  • 1 banana, ripe
  • 2 1/2 tbsp. agave nectar
  • 1 tsp. orange flavor (optional)
  • pinch of sea salt

Instructions

  1. Add all ingredients into a high-powered blender, and blend until smooth. Taste and adjust sweetener if necessary.
  2. Pour into prepared popsicle mold. Follow manufacturers freezing directions.
  3. Serve.

Notes

• The fat of the coconut cream along with the sugar in the agave nectar help to keep the popsicle from sticking to the mold. Don’t skimp here.

• The orange flavor is optional but it amps up the orange component of the creamsicle nicely.

PS—I woke up to the coolest thing on Wednesday, a virtual baby shower filled with a whole bunch of waffles and tips. It was heaven on steroids and made me feel like the luckiest person in the world.
